Treats are Sweeter When Shared

I have been trying some new dessert recipes for which my friends and family are the lucky benefactors.
First up was a relatively healthy snack. I tried this new recipe for a dear friend who was spending long days &nights at the hospital caring for her sick baby boys.
Captain Crunch - Granola
I think I improved it on the 2nd round which again was for a recovering friend and her family. I even tasted it this time, yummy, if I do say so myself...try it, try it and you may see (sorry my son is loving Green Eggs and Ham these days).

Ingredients:
1 large beaten egg white
3c old-fashioned oats
1 1/2 c chopped nuts (I used almonds, pistachios and cashews)
1 1/2 c coconut shavings (I bought 2 bags of coconut chips from Trader Joes)
1/2c agave syrup
1/4c. flaxseed
2 tbsp  (packed) light brown sugar
1 1/2 tsp kosher salt
1/2 tsp cinnamon
In a large bowl; toss all together to combine. Spread out on a rimmed baking sheet.
Bake granola at 300 degrees for 35-45 min depending on your oven. Stir every 10 min, until golden brown and dry. Let it cool on baking sheet, it crisps up when it cools. Mix in 1 c dried cranberries (can use cherries or blueberries too). Bag it up for snacks or just store in airtight container at room temp.

Peanut butter, chocolate and banana frozen yogurt - I did modify this one a bit by replacing the nonfat vanilla Greek yogurt with 2% Greek yogurt. I was told that one's taste buds needed to be prepared for the not so sweet favors hitting their tongue. So maybe 2% flavored like vanilla or honey Greek yogurt to bring some more sweetness without added any extra sweeteners.

The hearts have it with these creations for Valentine's Day. Although I cannot take credit for the actual cookie part since I got help from a store bought dough the decoration on top was a new find of mine. And thank goodness I actually gave myself ample time and room for errors as I needed it.The sugar cookie was topped with royal icing and then an edible wafer paper. The wafer paper is 100% edible made from potato starch. These lil gems were from Fancy Flours, a great on line baking supplies store.The trick was to cut the papers out based on the size of the baked cookie. All I did was bake the cookie dough, recut them after baked (if needed), cool completely (many hrs), apply a think coat of corn syrup, icing then the paper. Lay them face down overnight to ensure they stay put. Deliver to friends.
