Whenever we have vistors I can't help myself, but put out some goodies. Nobody should (will) ever go humgry in our house. I made these orange and nut squares a few weeks ago (yes, catching up on the blog now, having a 3 mo old baby will do that to you).
Ingredients:
1 package sugar cookie dough
1 c. orange marmalade
1 1/2 c. assorted nuts, toasted and chopped (I used pistachios & pecans but almonds & hazelnuts would be great too)
1 c. semisweet chocolate chips or chopped chocolate (I used a mix of dark and semisweet chocolate)
Directions:
Preheat oven to 350 degrees
Spread the cookie dough out on a cookie sheet to 1/4 inch thickness on a 9x12 inch pan using your fingertips. Bake for 25 min. Let cool.
Spread the marmalade over the cookie. Sprinkle with the nuts.
Melt the chocolate in a double boiler or microwave. Drizzle the chocolate on top of the cookie. Let cool, I stuck them in the freezer for a 10 min to set up nicely. Cut into 12 squares.
