Ahh Nutella

There are some things in life that you should just not be without. The first one being chocolate and now sleep ranks way up there for me as I am a new Mom to my 4 mo old boy. Some days I need more energy to keep up hence the chocolate...funny how that works. In any case I have been wanting to bake a treat with Nutella. For those of you that have no clue what Nutella is, well shame on you really, it is a chocolate hazelnut spread. It was developed by an Italian pastry maker in northwest Italy. It makes sense (or maybe it's just an excuse)that I do like this little treat since I am half Italian.

I adapted this recipe from a Giada De Laurentiis recipe.


Ingredients: 1 c. butter, at room temperature

1/4 c. plus 1 c. powdered sugar

1 tsp vanilla 2 c. flour

1/2 c. Nutella


Directions:

Pre heat oven to 35o degrees. ine baking sheets with parchment paper or silpat liners.

With a stand mixer, use a paddle attachment, beat the butter and sugar on high speed until all is light and fluffy, 2 min. Beat in te vanilla with the mixer running, gradually add the flour in some batches until well incorporated. Beat in the Nutella. Using a small scooper, drop balls of dough onto cookie sheets (12 per fits well). Bake until the cookies flatten slightly, about 12 min. Cool for 5 min then transfer to wire racks to cool completely, about 30 min.


Place 1 c. powdered sugar in medium bowl. In batches, roll the cookies in the sugar until well coated. Store in an airtight container at room temp.


These will be perfect for a play date tomorrow....
