During the week of Passover, which begins at sundown Monday night, as Jews we mark our ancestor's exodus from slavery to freedom the holiday's added dietary restriction. For those that don't know there is to be no eating of leavened bread or the like might seem like shackles of a different sort but alas there is always a way to make it sweeter.

Here is a treat I have been making for years now:
Ingredients:
4 pieces matzo
1 c. (or more) of chocolate chips
1 c. sweet butter (2 sticks) 1 c. brown sugar
1/2 c. chopped almonds
Preheat oven to 350 derees
Place matzo on cookie sheet I line them with non stick foil to help clean up
Place them flat, no overlapping
you wil need to break a few whole ones to make it fit nicely
Bring butter & brown sugar to a boil
Pour over matzo
Bake uncovered for 8 min
Remove from oven spread chocolate chips & almonds on top
Bake again for 4 min
Remove from oven, let cool, break apart
Matzo Munch (no baking)
Ingredients:
11 pieces of matzo
11 oz white & dark chocolate
3/4 c. chopped nuts, I use pistachios, and 1 1/2 c. dried fruit, I use apricots.
Brush 1 side of matzo with melted white or dark chocolate; drizzle remaining dark chocolate over the white coated matzo and vice versa. Sprinkle with fruit & nuts. Refridge until chocolate is set, 15 min. Breadk into pieces. Serve imeediately or store in refridge up to a week.
Cocoa Crunch (no baking)
4 pieces matzo
1 c. or more dark chocolate chips
1 c. cinnamon almonds (I make home made but Trader Joes makes some tasty ones)
2 containers cocoa nibs (get them from Trader Joes at check out, the whole box is 70 cal)
Melt the chocolate in microwave 1 min, stir until smooth.
Coat matzo with chocolate
Mix almonds & cocoa nibs together & sprinkle on top
Chill in refridge until set
Store in covered container.
Enjoy making these treats as I do . I have some friends & fam that ask for these even when its not the holiday.
