Celebrate good times!

When there is a b'day let there be cake...various ways. It's my hubby's b'day and so lots of fun times with family & friends. We had a little celebratory breakfast over the weekend. And what breakfast would be complete without a coffee cake. I made my rendition of a Sock-it-to-me cake.





Streusel filling -
1 package moist butter recipe golden cake mix (yes take a little help when you can)
2 tbsp brown sugar
2 tsp ground cinnamon


1 c. chopped pecans





Cake -
4 eggs
1 c. sour cream


1/3 c. oil


1/4 c. water


1/4 c. sugar




Preheat oven to 375 degrees. Grease & flour 10-inch tube pan.


Combine streusel filling - 2 tbsp dry cake mix, brown sugar, and cinnamon. Stir in pecans. Set aside.




For cake - combine remaining cake mix, eggs, sour cream, oil, water and sugar. Beat together at med speed for a few min. Pour 2/3 of batter into pan. Sprinke the filling and spoon the rest of the batter on top evenly.


Bake for 45-50 min or until toothpick inserted in center comes out clean.


Cool in pan for 25 min then invert on serving plate and cool completely.


To finish it off I opted for just dusting the cake with powdered sugar. You can also top it off with a simple glaze - 1 c. powdered sugar, 1 -2 tbsp milk - stir until smooth and drizzle on cake.








One more sweet treat...




After a tasty little b'day lunch today I surprised Darin with another little dessert. I made a frozen yogurt pie. I just took a cute pan and layered it with crushed oreo cookies, for the bottom crust, then 3 different frozen yogurts - cookies and cream, madagascar vanilla and graham cracker. Our fav little yogurt place - Yogurtland didn't have peanut butter (his fav) so I had to substitute :) and then just put it in the freezer over night.


You can just take out big slices to serve - looked good!
