When you have lemons make lemon bars


Some things are just tried and true and lemon bars are definitey that kind of item. Last month my MIL stayed with us and one afternoon before I took her to Mommy & Me class we had lunch at this great place and she was eyeing the lemon bars on the dessert counter.
When she returned home the following week I sent her a care package of goodies including lemon bars. This may be an example of you ask and you shall (finally) receive.

Here is the recipe from a dear friend, Julie Weiss:
Grandma Lu Lu's (that is what the granchildren call Julie's mother, Mary Lou) Lemon Bars

Crust:
1 c. soft, sweet butter 2 c. flour 1/2 c. powdered sugr

Mix the butter, flour and sugar together. Combine well and press into a greased 9 x 13 baking dish. bake for 15 min @ 350.

Filling:
4 tbs lemon juice 4 tbs flour
1 lemon rind, grated 1 tsp baking powder
4 beaten eggs powdered sugar to sprinkle on baked bars
2 c. sugar

In a bowl, combine the lemon juice, lemon rind, eggs and sugar together. Set aside. Then mix the flour and baking powder together. Add to the egg mixture. Pour mixture over the ot crust and bake for 20-25 min. Sprinkle with powdered sugar and let it set over night. Cut into squares. Enjoy!!!

Note - The more fresh lemon rind you add the stronger the lemon flavor will after they are baked.
