Bring in a sweet New Year!

Happy New Year to all my friends and family. Rosh Hashanah is the Jewish New Year (yes finally adding this update on the eve of Yom Kippur, ok a lil late).


Rosh Hashanah begins the year of Jewish festivities, foods and traditions. You may wonder what do the words Rosh Hashanah mean. It comes from the Hebrew words, Rosh, meaning the head or beginningand hashanah menaing year. The ten day period begins with Rosh Hashanah and ends wit hYom Kippur, known as the Days of Awe or Penitence, or more usuay called the High Holy Days. In Judaism, it is during the period that divine judgement on each person's life if made . It is a time of reflection, soul searching of one's life. It is also a time of joy and hope for the coming year.


Both Rosh Hashanah and Yom Kippur are celebrated in much the same way throughout the world. The shofar, or ram;s horn is sounded at synagogue services as a reminder of the spiritual awakening, to wake from self-satisfaction to reflect and take action.

The holiday reflects our life today, as it is celebrated at the time of year when school begins, families return to busy schedules after summer vacation. There are a few traditions - buy a new outfit (Momma did this!) and to send New Year's cards (did this too). Since the holiday coincides with the beginning of the agricultural year for trees bessings ar emade over the seasona foods that are plentiful, such as apples, pomegranates, and grapes. Apples are dipped in honey in the hopes for a sweet year.

We have so much to be thankful for this year and look forward to the blessings and sweetness in the coming year!


Here was my interpretation of honey and apples for this New Year....to start things off on a sweet note


Honey cake
Ingredients:


1 1/2 c. all purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
3/4 tsp allspice
2 large eggs
1/4 c. sugar
2 tbsp canola oil
1/3 c. honey, dark is best
1/4 c. unsweetened applesauce
1 tsp lemon zest
1/4 c. sliced almonds

Preheat oven to 350 degrees. Spray a metal or glass loaf pan. I used a pan that makes 12 mini loaves.
In large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and allspice; set aside.
In another large bowl, beat eggs with mixed, add sugar, oil and honey. Beat until lall combined and looks pale yellow, stir in applesauce and lemon zest.
Slowly incorporate flour mixture into egg mixture using a mixer, mx well but do not over beat.
Spoon batter into prepped pan, sprinkle with almonds. Bake 40-45 min, toothpick should come out clean. Cool cake in pan for 15-20 min and then onto wire rack.


Apple Cinnamon Wontons

Ingredients:
2 med apples, use whatever type you like I used a combo of fuji & granny smith
1 tbsp light brown sugar
1 tsp lemon juice


1/2 tsp cinnamon
24 wonton wrappers


Preheat oven to 350 degrees. Coat large baking sheet with cooking spray.


In med bowl, combine apples, brown sugar, cinnamon, lemon juice; toss to coat apples.


Place wonton wrappers on flat surface. Drop apple mixture by teaspoons into the center of each wrapper. Moisten edges of wrappers with wet fingers, fold over one corner to make a triangle and press sides to seal. Transfer filled wrappers to baking sheet and spary them with cooking spray.

Bake wonton until golden brown, about 15 min. Let cool for 10 min. Serve immediately or store as you like. We served them with vanilla whipped cream and a touch of cinnamon.
