More reasons to eat pumpkin (or something orange)

Yes, pumpkin seems to be everywhere this time of year. All the more reason to try new recipes in cooking and baking with such a great item this time of year.


Here are few new items I made recently to entice my boy & friends to like pumpkin a few new ways.



Pumpkin pancakes
Simple recipe I mocked up so my son could have a seasonal flavor whipped up into one of his fav finger foods.

Ingredients:
2 c. multigrain baking mix from Trader Joe's
1 c. plain whole milk yogurt
2 egg whites (for the babe)
4oz applesauce
1/2 c. pumpkin puree
Mix it all together in a large bowl. Spoon out small portions for the perfect size for the babes.
Cook on both sides until golden.

Orange pepper hummus

Ingredients:
1 roasted orange or red bell pepper (I used the jarred ones from Trader Joe's)
1 can cooked garbonzo beans, rinsed and drained
1/3 c. plain whole yogurt
1 small garlic clove
2 tbsp olive oil
1/2 tsp cumin
In food processor or blender combine the chickpeas, roasted pepper, yogurt, garlic, olive oil and cumin and process until smooth.

And one for the parents:

Dark chocolate pumpkin bark
Super easy-melt 1/2 of trader Joes lb plus dark chocolate in one bowl; in separate bowl 1/2 bag white choc. melted, mix in a few tbsp pumpkin pie spice (I like trader joes) basically to your liking. Pour melted dark choc onto small cookie sheet covered in wax paper, place spoonfuls of the white choc&pkin mixture on top. Take a knife and draw through the white choc to make swirl effect. Place in freezer for 1/2 hour to set, break up for individual piece servings.
