Our holidays are made more special with our son partaking in the traditions. This year it was so fun to see him find the *afikomen and reap the reward for that. At Grandma Pressman's house the reward was a huge basket of Cars' goodies & a few dollars to put into his bank- oh boy!
There are some things in life that are plain and simple, which may be good. Then of course plain and simple can always be improved. One such thing is matzo. I was actually told recently by a friend that plain ole matzo is Ok but its made better in special treats like matzo ball soup (namely my Mother's), sweet treats made matzo meal, chocolate flourless cake and one of my specialties, Matzo Roca. Yes, Matzo made to taste like almond roca. Yes, matzo can be made better with butter, brown sugar, dark chocolate and almonds. Is your mouth watering yet?
Matzo Roca
Ingredients:
4 pieces of matzo
1 c. (or more) chocolate chips
1 c. sweet butter (2 sticks)
1 c. brown sugar
1/2 c. chopped or sliced almonds
Preheat oven to 350 degrees
Place matzo on cookie sheet (place
them flat, no overlapping, you'll need to break a few
whole ones to fit it all nicely).
Bring butter and sugar to a boil.
Pour over matzo
Bake uncovered at 350 degrees for 8 min
Remove from over sprinkle chocolate chips and almonds on top
Bake again for 4 min
Remove from oven, let cool, break apart
These are usually a big hit so double the recipe.

*Afikoman (Hebrew language: אפיקומן, based on Greek, epikomen or epikomion[επί Κομός], meaning "that which comes after" or "dessert")[1] is the larger piece of matzo which is broken in two during the early stages of the Passover Sederand set aside to be eaten as a dessert after the meal.
