Birthday Treats!

You are never too old for a b'day treat!
Instead of cake try a different goodie. In my hubby's case he loves cookies (traditional ones are best) so I went with a new oatmeal one I have been working on and homemade vanilla ice cream.
The oatmeal cookies are from The Petit Appetite cookbook that I have modified a little.
Here is recipe:

1/2 c. unsalted butter                                                               
2/3 c. packed organic light brown sugar                               
1 egg                                                                                         
1 tsp vanilla                                                                               
1/2 c. unbleached all purpose flour  
1/2 tsp baking soda
1/4 tsp salt     
1/4 tsp cinnamon
1 c. old fashioned rolled oats                          
 *1/2 c. dried cranberries (my hubby & I do not do raisins, ever!) or dark chocolate chunks depending on your mood
Heat oven to 350 degrees. Spray 2 cookie sheets with non-stick cooking spray, I have been using coconut oil version from Trader Joe's. Cream butter and sugar together in large bowl until light and fluffy. Add egg and vanilla and beat well. 
In separate bowl, stir together flours, baking soda, salt and cinnamon. Fold dry ingredients into butter mixture until dough comes together. Stir in oats and dried fruit or chocolate until just combined.
For the ice cream I use the basic vanilla ice cream recipe from the Cuisinart machine we have (wish we have had forever and love - makes ice cream, sorbet, frozen yogurt....a good buy at Williams Sonoma) which is ridiculously easy to make in about 30 min.
1 c. whole milk, well chilled
3/4 c. sugar
2 c. heavy cream or lighten it up with 1/2 & 1/2 
1-2 teaspoons vanilla extract - if you can find vanilla beans use the contents of 1 bean and 1 tsp extract.
In a medium bowl, use a hand mixer or a whisk to combine the ilk and sugar until the sugar is dissolved, about 1-2 minutes on low speed. Stir in the cream and vanilla to taste. Turn on machine, pour mixture into freezer bowl through spout and et it mix until thickened, about 25-30 min.
