Mother's Muffins

Who doesn't like a good muffin? I have been experimenting with some new ingredients. First up is gluten free flour. Over the last year I have discovered how much better I feel when I eat gluten free. As luck would have it my trusty Trader Joe's has gluten free flour and a great recipe I modified from.
Here are some apple cinnamon muffins to try:
2 cups gluten free flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 large eggs
1/2 c agave
1/2 c sunflower oil- you could try coconut oil as well
1/2 c milk
1 tsp vanilla
1 c applesauce

Preheat oven to 350 degrees. Spray muffin pans with coconut oil (another great Trader Joes product).
In a med bowl combine the dry ingredients, flour, soda, cinnamon and salt. In a separate bowl, whisk all the wet items, eggs, agave, oil, milk and vanilla and stir into flour mixture. Do not over mix. Stir in the applesauce. Scoop the batter into muffin pan. Yes, the batter will look very wet but that's ok they come out nice and moist and not so dense like many gf baked goods. Bake for 18 minutes.
I added 1 c of blueberries to half the batter and the other half dark chocolate chunks.
I gave these to a pregnant friend who was so happy with both options!
