Gotta start with this - I did it! Yes, I ran my first 10k on Superbowl Sunday.
It was a thrill and a bit of a challenge. I have done some 5k before but this was new but I was up for it. I needed some music (just like my runs at home on the treadmill) to keep me running, this is what keep me going... yup got it, check - C'est La Vie was the first song and as I crossed the finish line with MJ's Rock w/you.
10k prep - I can't say I did much in the way of training since my friend just talked me into it 3 weeks before hand. I did start picking up my endurance runs. Foodwise I stayed away from foods with fiber the night before and the morning of the race. So no veggies or fruit after 4pm. Dinner the night before - was a carb load - well kind of- 1/2 the meal should be carbs - I had maybe a double my usual portion of quinoa and some protein. Drank lots of water! The morn of I started off by hydrating myself - water, and coconut water before the race. I ate my usual bf of steel cut oats; hard boiled egg just a lil more oats. During the race I tried to keep hydrated every 20mins. I did pop one GU gel packs (interesting info here) which seemed to help keep me powered up.
The biggest moments were seeing my son and hubby at the 2 mile marker cheering me on (yes, I had a few tears in my eyes) and again as I was approaching the finish line. Getting a high five from my son was amazing. I finished under an hour which was a nice surprise too.
I found my walking feet soon after. After we got home all I wanted to do was take a hot shower. And as I was finishing up I heard the last song tying this all together Team - by Lorde. Of course it was just a team of one this day and a pretty prod one.
What Superbowl Sunday would not be complete without some fun food? Yes, you can eat clean but that is what you do for yourself others crave something more. Here was our party food. This recipe is from my girlfriend, Livia and was the first recipe that I tried from my new cookbook, a cookbook that I'm actually published in...and the rest of my circle of mommy friends. We put together an amazing, if we do say so ourselves, a cookbook of our family favs. Its really a great resource. I have been cooking 1 new recipe a week for the family.
Here is the recipe:
1/2 c. pecan halves
1 jalapeno pepper, stemmed and seeded
1/4 c apricot preserves
4-in round Brie cheese with rind, room temp
1 loaf French baguette
olive oil
Preheat oven to 425 degrees
Coarsely chop pecans and jalapeno separately.
In a small bowl, combine jalapeno and preserves; mix well.
Cut Brie in half horizontally
Place one half of Brie, cut side up, onto the center of pizza stone or baking sheet.
Spread half of the apricot mixture evenly over the bottom half of Brie.
Top with half of the pecans and remaining half of Brie, cut side up.
Spread remaining apricot mixture over Brie; sprinkle with remaining pecans.
Cut baguette on a bias into 24 1/4 inch thick slices.
Arrange baguette slices around Brie; spray/brush with oil.
Bake 8-10 min or until baguette slices are golden brown and Brie begins to soften.
Remove from oven; let stand 5 minutes before serving.
