So a few things I learned on a recent trip to WA. All themed under the heading of layers:
1) Wear layers of clothes (yes, CA girl almost frozen without them)
2) Layered salads are a good thing
3) Layer in lots of pics, video and txts while on biz trips away from the family
Under the guise of everyday salads can be something new and different just by changing up the combos and presenting it in a new way.
I was inspired since I had an interesting salad on my trip - quinoa, kale, beets (yellow and red), and a few sections of blood orange. So I thought, well I pretty much have a variation on the same lunch most days lets make it look more interesting by layering it up in a cool bowl or cup. So here was my first attempt on a layered salad - (my fav Trader Joes) red quinoa, sun dried tomatoes, spinach, garbanzo beans, avocado with olive oil and lemon pepper. And yes, totally vegan.
Some other ideas - Tex-Mex Shrimp - quinoa, tomatillo salsa, diced avocado, squeeze of lime juice, black beans, pan grilled shrimp and minced red onion.
Veggie - mix up - start with couscous, for the veggies roast 1 large butternut squash cut into 1/2 inch pieces, toss with 2 tbsp olive oil and a lil salt and pepper. Bake on a parchment lined baking sheet for 40 min at 425 degrees. Meanwhile, and another baking sheet toss 1 lb Brussels sprouts with 2 tbsp olive oil and lil salt and pepper. Arrange, cut side down for 20-30 min. Try a miso dressing - 1 inch peeled ginger, 1 garlic clove, 1/4 c white miso, 1/4 c rice vinegar, 1/4 c tahini, 3 tbsp agave and 1/3 c water. Add scallions on top.
All you have to do is just stir it up and eat!

When i travel for biz its hard, I miss my boys and all the everyday things that happen so we keep in contact via txt, picture swaps and yes multiple phone calls. With some friends and family we do Face Time but those of you who know my hubby he is still adverse to most Apple things (I have them and enjoy them but him, not so much). The best part of the trip is coming home... especially when I am going from cold WA to sunny CA (I'm not complaining but it sure makes it nice). On this last trip music helped pass the time (very short hop to and fro WA) as I was landing and taxing in Phillip Phillips, Home was playing and then Ray La Montangue, the Best Thing...perfect ending to this trip setting the stage to see my boys curbside.
