Happy MeDarial weekend


What a perfect way to celebrate my hubby's b'day with a long holiday weekend. Every few years he lucks out and his birthday coincides with the holiday which makes it so nice to enjoy more festivities. So this year was perfect for a weekend of playing - kicked off the celebration with dinner at Dia de Campo, which was a first for us. A small plates type place with everything from street tacos to great takes on ceviche (my fav) and veggie dishes that I would love to replicate like the grilled cauliflower with egg. 


We continued on Sat. with an early showing of Godzilla in 3D. Yes, with our 3 1/2 yr old which was questionable with big time action and a rather scary creation. Our son, loved it! We managed to ensure his comfort with the explanation that in this story Godzilla is the good guy trying to destroy a few other bad creatures (yes a bit of stretch but it did help). Topping off any good creature movie is hard but I tried with a new take on a lemon cake. I took off from Giada's lemon bundt cake

My hubby like a good lemon cake minus the meringue so I made the cake but didn't make the chocolate glaze from the recipe but my own lemon glaze - Put 1/2 c. lemon juice (~2 lemons), 3 c. confectioner's sugar in saucepan, heat to boiling, pour hot glaze onto cake. I would recommend 40-45 minutes total bake time depending on high strong your oven is, especially with the candied lemons to keep it all moist.
Sunday was a day at our local Fiesta Hermosa fair (or what my dear friend and I like to call the arts & craps festival). Now my son can really enjoy it since they have kiddie rides and games. He did like for a lil while but then sadly we had to leave before he completely fell asleep standing and he needed some rest before we headed out to our first KISS arena fball game.
Yes, my hubby is a kid of the 70s and the music that he grew up with such as KISS and his love of fball this is a natural match. Of course when we arrived my son, asked 'is this the kisses?'. Although KISS didn't beat the AZ rattlers it was a fun night, a fball but with a KISS concert spin too...music and dancing girls hanging from cages in between plays.
Last up was our day of rest and family. Visited Grandma Judy, 5 weeks post hip replacement surgery, walking with no cane and holding that right broken arm up high (yes, she broke her arm a few weeks ago but hanging tough) playing games with her grandson.
And what Memorial Day would not complete with a bbq dinner so I made my famous Maple glazed salmon, roasted Brussels sprouts, carrot salad and sweet potato coins.

Sweet pot recipe from my trainer - I took 2 sweet pots, sliced 1/4 in, placed on baking sheet, sprayed with coconut oil spray and lil salt & pepper. Bake at 400 degrees for 40 min. A big hit with the boys tonight.
