So it seems only appropriate to sing "You say its your birthday" by the Beatles when it is a true fan is turning another year older. And so is the case of my dear Mom.
We celebrated Mom by starting off the day with a song & pumpkin cornmeal muffins (Mom asked for a cake and this was a good substitute as it was in Highlights and my son was only too happy to bake them and somehow I forgot to take pics) a harbor walk, lunch at one of her fav 22nd St Landing
and a family dinner that evening.
We love you so much Mom and love that we can celebrate another bday with you. Here's to a great year ahead!!!
Although the on going heat wave or what I like to call our 2nd Summer in Southern CA doesn't make you think that Fall is right around the corner you can fake it out by enjoying some Fall flavors.
Here is a new product at Trader Joe's - Gluten free Pumpkin pancakes
It is perfect to make the whole recipe and then freeze the extras for future bfasts (I normally do this either with pancakes or waffles to keep in the bfast rotation for my lil man). Sorry about the star spangled banner type plates, trying to clear out past holiday items. Note the red plastic wrap too - I have had this roll since last Xmas, is it done yet?!

1/2 c. coconut oil - in a solid form but softened
1 c. brown sugar
Cream these together
Add 2 eggs
1 tsp vanilla
1 1/4 c. flour
1 tsp coarse salt
1/2 tsp baking soda
Mix on low
Add 1/2 c. rolled oats
1/2 c. coconut chips
1/2 c. pepitas (roasted pumpkin seeds)
1 c. dried cherries
1/4 c. flax seed - use ground
5oz. bittersweet chocolate chips
mix again on low until just together
Chill the dough 1 hr.
Use silpat or parchment paper
1 heaping tsp - use lil ice cream scoop for uniform size cookies
bake 350 degrees for 13 min
Enjoy!

Tried out a new baking pan, one for snack bars from Williams Sonoma. I thought this would be perfect for homemade granola bars for my lil one and since I had a gift card burning a hole in my pocket it was a no brainer purchase. Here is the recipe. I did change use coconut oil instead of regular oil and coconut chips as opposed to flakes. With many of the ingredients being drier to begin with I baked it for less time, about 25 min. They came out very dry, almost dry granola consistency.
