I recently posted on Instagram that soup makes a body good. Well, I have needed it as of late. I had the flu 3 weeks ago, was well for 12 days and then got sick again with a sinus infection related to the flu. This flu season is NASTY! I never get sick and now twice in 1 month you better believe I will try every homeopathic aid I can (plus some good meds from Dr.). Besides the great immunity boosters from kreation, neti pot I had to make Mom's chicken soup.
Ingredients:
1 large whole chicken - I try to get the biggest one possible to ensure good flavor ~4.5 lbs this time - rinse and pat dry
1 bunch parsley - cut stems off
1 bunch cilantro - cut stems off
2 leeks - trimmed and diced
1 lemon juiced
1 tbsp sea salt
1 tsp black pepper
3 carrots - 1/4 diced
1 onion - diced
4 chicken bullion cubes

Place chicken in large stock pot. Place water just over top of chicken. Should be medium high heat. Place all other ingredients except for bullion cubes. Bring to a boil. Add bullion cubes. Cover and simmer for 2 hrs.
Take off of stove, let cool then place in refrigerator over night. Next day, de-fat, remove fat that has risen to the top. Strain out herbs. Put broth, few carrots, onions and shredded chicken. Heat up - perfect Momma's penicillin.

And continuing with my happiness project. I have identified a few overarching goals - simplify & have more fun. And each month focus on something that I want to improve. This month's focus is parenting. There are so many facets to doing this job and I am looking for ways to do it better...different. Two important things I am working on is being calm and to be a better listener. Being calm all the time is really hard but I find that if I am not so hard on myself that translates well to everyone around me, especially my lil guy. I try and use a lot of humor, that is very calming and to get my son to laugh when all he wants to do is run around naked after a shower with 10 min to get out the door to school...always a good thing!
Being a better listener, really allow my son to be heard. We've instituted sort of a brain dump at bedtime after we read a book. We ask our son to share with us anything he wants, talk about his day, anything on his mind. We don't open it up as Q&A but just an opportunity for him to share anything he wants a kind of kiddo stream of consciousness. Now you may need to limit it to 5 min if you have a bit of a chatterbox. Its all good!
