Gung Hay Fat Choy!

Happy Chinese New Year to all celebrating. Gung Hay Fat Choy means - "May You Be Happy and Prosperous". We started off celebrating the year of the sheep last week with wearing red to school, making (red) pomegranate smoothies and love watching a dragon parade at school. This week my friends and I will get together at a fav dim sum spot in the South Bay, Sea Empress so let the cart wars begin. Going to dim sum was a tradition growing up in my family I even remember going with my dad to a place in downtown LA actually into the kitchen to pick out what we wanted ass they cooked. I may also try my hand at making a tradition New Year cake called  nian gao. Looks like a good (vegan) brown sugar cake that may be sticky but worth it. Stay tuned for that baking attempt. I have also put out my lil sheep figure in the house so 'baaaaaa' to you.

This week I made a friend some treat as a home warming gift. My son decided to add in a lil art work for our friend's empty walls. Here is the recipe:
3 very ripe bananas
2 c. Trader Joe's multi grain baking mix
1 egg white
1 c. brown sugar
1/4 c. coconut oil warmed
1 tsp vanilla
1 tsp cinamon
1/2 c. vegan dark chocolate chips
350 degrees for 20 min
baked most of the batter in heart shaped muffin pan and the remainder in mini doughnut baking pan. The doughnut pan is a great option for baked doughnuts and in this case my son was ready to be the taster after getting back from the dr with ear infection and now the croup...is it spring yet?! Tonight he will have Mom's chicken soup
