What is your favorite Dr. Seuss book? Yes, there are many!
At my son's school they pay tribute to Dr. Seuss for an entire week starting with read across America Day, March 2 which is Dr. Seuss' birthday. Another fun day was the wacky Wednesday when you could wear your wackiest clothes and hair day - my son definitely got into the spirit of the day!
We kicked off the week with the musical Seussical thanks to our dear friends the Golbeck's. The musical weaves together a few of Dr. Seuss' beloved stories. Fun to see the characters come to life with song and dance esp. Cathy Rigby playing the Cat in the Hat. Perfect start to the Dr. Seuss week!
And of course I made another version of green eggs & ham using some homemade pesto for our green element.
Pesto recipe:
1/2 c. pine nuts
3 c. packed basil leaves fresh from our garden but any fresh type will do
3 garlic cloves
1 1/2 tsp sea salt - next time I will go lighter
1/2 c. extra virgin olive oil
2 tsp lemon juice
Toast the nuts in a pan for about 8 min
Combine the nuts, basil, garlic, and salt in a food processor while you add the olive oil in a slow and steady stream. Add the lemon juice. The consistency should be a grainy paste, not a puree.
I made lil frittatas - whipping up eggs, Canadian bacon (a healthy version from Trader Joes since we don't do ham in this house), and the pesto. Put the egg mixture into a mini muffin pan and baked for 15 min. great for breakfast or lunch.
