New snacks

Are you looking for some new treats for the kiddos? Well here are a few new ones from our house - something chewy and a two fruit ones perfect for hot days and simple to make.

Cherry-date oat bars
Of course there is nothing wrong with store bought granola/oat bars but here you control the sugar and some good for you adds like flaxmeal.

Coconut or extra-virgin olive oil                           3 cups gluten-free rolled oats
1/2 cup unsweetened dried cherries                     1/2 cup unsweetened dried dates2 tsp ground cinnamon                                       1 tsp coarse salt1/2 cup sunflower butter or smooth natural almond butter (at room temperature) 4 Tbsp ground flaxmeal                                      1/2 cup unsweetened applesauce1/2 cup honey                                                   3 Tbsp orange juice1/4 tsp vanilla extractHeat oven to 350 degrees.
Brush an 8-by-8-inch pan with oil and line with parchment paper.

Combine oats, cherries, dates, cinnamon, and salt in a medium bowl. In another bowl, combine almond butter, flaxmeal, applesauce, honey, orange juice, and vanilla and stir to combine. Add wet mix to dry one and stir to combine. Press mixture evenly into pan with your fingers and bake on middle rack until golden brown and firm, 30 minutes. Let cool completely, then remove from pan and cut into 9 squares.
Store bars in an airtight container up to three days.




You could also change it up with different dried fruits. Maybe shredded coconut and apricots or mangos.




Monkey bites
These lil frozen treats will make you think of frozen bananas but better as lil bites.


2 frozen bananas - peel 2 bananas wrap in plastic wrap and put in freezer for 8 hrs.
Take out and slice in 1/2 in slices
Roll in crushed roasted coconut chips and place on tray to put back in freezer for 2-3 hrs
Can also dip in warmed almond butter and then rolls in coconut chips and then freeze again
Try these on a hot afternoon instead of ice cream.


Fruit kabobs

My son specifically asked to make these after seeing a version of it in his Kiwi Crate this month. You can do any fruit you like, just be careful to pick something that won't fall apart easily when you try to get onto the skewer. 
Ingredients:
Grapes, raspberries, kiwi, pineapple, blueberries
Wood skewers
Start threading on the fruit in any arrangement you like.
Perfect for a light dessert for the whole family or afternoon snack.
