When you have lemons......make lemon bars!

My son recently received a new Kiwi Crate. This one had items to make a lemonade stand sign and a cash register to learn about money - buying/selling.
He was so excited about the idea of lemonade stand that he thought when we have one of our own we would have to have some baked treats too. With that in mind lemon bars seemed perfect.
Ingredients
1 c. softened butter          
2 c. sugar
2 1/4 c. all purpose flour
4 eggs
juice of two lemons
zest from 2 lemons ( the more zest the stronger the lemon taste)               
powdered sugar if you like              
Preheat oven to 350 degrees.
To make the crust, mix the butter, 2 c. flour and 1/2 c. sugar in a bowl. Press the dough into the bottom of an ungreased 9x13 in. pan. Place the pan into the oven and bake for 15-20 min. Let cool. To make the filling, whisk 1 1/2 c sugar, 1/4 c. flour, the eggs, lemon juice and zest in a separate bowl. Pour the mixture on top of the baked crust. Put the pan back into the oven for another 20 min at 350 degrees.

Let the bars cool completely before serving. Dust the tops with powdered sugar.


We wound up bringing them to our friends, who were having a lemonade stand and they loved them.
