Birthday cookies anyone?

I new spin on an old fav, yes I don't mind if I do.
A dear friend of our family was celebrating a birthday and what better way then to have some treats.
I remembered that he loves English toffee and I've been wanting to play up a gluten free oatmeal cookie recipe so here goes.
Gluten free oatmeal toffee cookies Ingredients:
1/2 tsp baking soda                                            
1/2 tsp baking powder                                        
1/2 tsp sea salt                                                  
1 tsp xanthan gum                                              
1 c gluten free all purpose baking flour                 
1/2 c brown sugar
1/2 c granulated sugar
1 egg
1 tsp vanilla
2 tsp water
1/2 c coconut oil- in solid soft state (could also use butter)
1 1/2 c gluten free rolled oats
1 c toffee baking bits

Stir together the dry ingredients except oats and toffee and set aside.
Cream oil and sugars together. Add egg, vanilla and water and mix until blended well. Add flour mixture and mix until just combined. Stir in oatmeal and toffee.
Cover two cookie sheets with parchment or a silpat and scoop out dough with mini ice cream scoop. Press down on scoop. Bake at 350 degrees for 10-12 min. Let them cool before removing. Makes bout 3 dozen.

The result seems to have been a hit with our friend, he admitted to me that he had two before breakfast and My hubby even said this was his new favorite.
