Muffins please!!!

Yes, I got a lil off track this week, not the usual Monday (try something new Monday) post. Call me a bit over programmed with Halloween frenzy.
I will try to make up for it by sharing a few new recipes that have been recently shared with me.


The first one is from theOneiadore on IG that my friend Sara brought to our annual Halloween Park Party - complete with trick or treating tent to tent & cupcake decorating.

Quinoa Apple Nut Muffins
These are the most moist and delicately flavored healthy muffin I have sunk my teeth into. You will definitely want to bake up a dozen or two.

Ingredients:
2 c. quinoa flour
2 tsp baking soda
¼ tsp salt
2 ½ tbsp. unsalted butter – room temp
2 eggs – room temp
3 small apples (Fuji works very well)
1 ½ c walnuts
2 tbsp vanilla
4 tbsp agave
¼ c coconut sugar

Preheat oven tp 350 degrees. 
Mix quinoa flour, baking soda, and salt in a large mixing bowl and set aside. In a separate mixing bowl, cream the butter and coconut sugar, then add the agave, vanilla, eggs, and mix all together. Blend the apples and walnuts together until creamy. 
Combine the apple walnut mixture to the wet mixture, then slowly pour the wet mixture into the dry mixture. This is where I like to just use my hands to mix the whole thing together. It will seem very wet and soft for a muffin mix, but this is the right consistency. 
Spray your muffin tray and scoop the mixture into each cup. These muffins don’t rise a whole lot. Bake in the oven for 20-30 min depending on how deep your try is. Test the center to see the readiness with a toothpick, if it comes out clean, its ready!

mini blender muffins.

They are flourless and naturally gluten-free, also diary and oil-free - yeah!
