Chicken taken up a notch

Are you bored with your regular ol grilled chicken breast. Well, here is a new one to try - 
Braised Chicken with artichokes, capes and lemon

Ingredients:
4 chicken breasts patted sea salt and black pepper
1 tbsp olive oil
6 cloves of garlic smashed
4 oz frozen artichoke hearts, thawed and halved
3 tbsp capers
1/2 tbsp chopped oregano
1 tbsp arrowroot or gluten free flour
1 cup chicken broth
1 small lemon, sliced paper thin

Season chicken with salt and pepper. Heat a large skillet over medium-high heat. Add oil, then chicken. Cook 10-12 min. Transfer to a plate.

Reduce heat to medium. Add garlic and artichokes; cook until slightly golden brown 5 min. Add capers, oregano and arrowroot/flour, stirring constantly, 30 seconds. Stir in borth and lemon, scraping bottom of pan for all the browned bits. Return chicken to pan, bring to a simmer. Partially cover, reduce heat and simmer 10 min. Remove lid; continue simmering until sauce thickens slightly. Serve with brown rice.
