Hope you had a great holiday and had a chance to enjoy friends, family and a lil down time. I definitely did and am thankful for it.
Now many of you may like to do resolutions, I myself do not but do like to reflect on the past year and how to focus myself this year.
One way is to continue to eat well and challenge myself with new workouts.
I pledge to try to make one new thing each week and share with you the fruits of my labor. This week its a breakfast item, but really you could eat it for breakfast or a snack too.
Breakfast Cookie
Ingredients:
1 - 1 1/2 ripe bananas (about 1 cup mashed)
1/2 c. unsweetened applesauce
2 tbsp coconut oil, softened
3-4 pitted dates
1/2 c. coconut flour
2 tsp cinnamon
1 tsp vanilla extract
1 tsp baking soda
1 1/2 tsp fresh lemon juice
1/2 c finely shredded unsweetened coconut
2 tbsp chopped dried apricots
2 tbsp dried cranberries
2 tbsp dried blueberries - of course you could swap out the dried fruits for whatever you like/have on hand
Preheat oven to 350 degrees
Put the bananas, applesauce, coconut oil and dates in a food processor and puree until smooth, about 40 seconds.

Add the coconut flour, cinnamon, vanilla, baking soda and lemon juice and pulse 6 times to just combine.
Add the remaining ingredients and pulse a few times to combine it all.
Spoon out with small ice cream scoop balls of dough onto cookie sheet lines with silpat or parchment paper. Flatten balls slightly with the back of the spatula or bottom of a cup.
Bake for 18-20 min until cookies are lightly browned all over and slightly form to the touch. Cool completely and store in airtight container in the fridge. I like to keep them in freezer until one is needed then you can just take out and thaw or pop in microwave to warm up.
These seem to be climbing the charts for my son and hubby.
