Mix up blender muffins

You need to try these, so easy to whip up in the blender and gluten free. And for something different add a variety of toppings to spruce this guys up. 

Preheat oven to 400


Ingredients:
2 cups gluten free oasts
2 ripe bananas
2 eggs
1 cup 2% Greek yogurt
3 tbsp honey
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp vanilla
pinch of sea salt

Put all ingredients in the blender and blend for 2-3 min.
Put in muffin liners into a muffin pan and spray each one. 
Fill each cup up 3/4 way then add a few toppings:
mixed berries, chocolate and nuts, sliced apple and cinnamon
I did all three.  
Bake for 13-15 or until toothpick comes out clean. 
Cool muffins for 4 min in pan, then remove and let cool completely on a wire rack. Can easily freeze  just wrap in plastic and put in a double zip lock bag until ready to serve.
