A dear friend gave me this gorgeous cookbook, The Forest Feast, for my birthday. It is filled with beautiful, but simple recipes. I changed up one that definitely spoke to me as a great and different snack.
Sunflower seed butter coconut balls.
Ingredients:
1/2 c. sunflower seed butter - you could use any type of nut butter you like
10 pitted dates
1 tbsp honey
1 c. unsweetened shredded coconut + 1/2 c. for rolling balls in
Blend everything together in a food processor until smooth. Roll into 2 in balls and roll in coconut. Keep in air tight container for up to a week.
My son's new fav treat. My hubby even likes them and he doesn't eat coconut anything!
