A healthy snack for your kiddos, especially if they like a chocolaty bite and you don't want it to be loaded with sugar.
1 1/2 c. crisp brown rice cereal (I but this one)
1 c. gluten free rolled oats
1 tsp coconut oil, melted
2 egg whites, room temp
1/4 c. plain nonfat Greek yogurt, room temp
3 tsp agave
1/2 tsp sea salt
3 1/2 tbsp mini chocolate chips, divided
Preheat the oven to 300 degrees, spray your 9" square pan with nonstick cooking spray.
In med bowl, combine the rice cereal & oats. In another bowl, whisk the oil and egg whites. Add the yogurt, agave and salt, mixing to combine well. Stir i the cereal combo. Add in 3 tbsp chocolate chips.
Press the mixture into prepared pan using a spatula and gently press remaining chocolate chips onto the top. Bake for 15-29 min or until light brown on top and firm to the tough in the middle. Let cool completely to room temp before cutting into 25 squares. Will keep for up to a week in air tight container in the fridge.
Enjoy!
