Can't get enough different ways to get pumpkin into your day this time of year?
Try these little treats for a morning or afternoon (really anytime of the day) snack for the kiddos.
Ingredients:
1/2 c. pumpkin puree
1/2 c. sunflower seed or almond butter
1/4 c. maple syrup
1 1/3 c. gluten free rolled oats
1/3 c. dried cranberries
2 tbsp chia seeds
1/3 c. pepitas
1 tbsp pumpkin pie spice
Mix the pumpkin puree but butter and maple syrup together, until smooth.
Mix in the remaining ingredients. Chill in the fridge for at least 1/2 -1 hr.
Using a small ice cream scoop, scoop out into balls and keep in air tight container until ready to eat.
