So many pumpkins so little time.....
This weekend was filled with so many fall festive things. First off we prepped for the annual Pumpkin race in Manhattan Beach. Although we didn't win (which our son was not happy about) this year we had a cool racer, dreamed up by my son and hubby, and was scrutinized for having a double stem. It was quite a show!
In honor of the race I made a few treats over the weekend, yes in a between racer design, soccer game, holiday photo shoot (which was borderline disaster - winds at the MB pier havoc), family dinner, and Halloween projects. Yes the usual craziness of the season!
Pumpkin oat chocolate bars
Ingredients:
1/4 c + 2 tbsp pumpkin puree (I use Trader Joes Organic Pumpkin)
1 1/2 tsp baking soda
3/4 c. sugar
3 c. gluten free rolled oats
3/4 c. brown sugar
6oz chocolate chunks
2 eggs
1/2 c. chopped walnuts
1 tsp vanilla
1/2 tsp pumpkin pie spice
1 c. sunflower seed butter Preheat oven to 350 degrees
In a large bowl combine sugars, pumpkin and beat until creamy.
Add eggs, vanilla, baking soda, pumpkin pie spice and mix well. Stir in oats, chocolate and nuts. Put into a baking pan sprayed with cooking spray.
Bake ~ 30 min until lightly brown around the edges. They come out a bit fudgey. Let cool and cut into squares.
Pumpkin O mix - Trader Joe's Pumpkin Os cereal mixed with cashews and pecans. I keep all my nuts in the fresher to ensure freshness. And last but not least my new fav weekly treat, an RX Bar. You find them around town, at Whole Foods, Trader Joes. A few different flavors. Trader Joes started carrying this one a few weeks ago just in time to kick off the pumpkin season.
