Festive times call for festive cookies

Ginger molasses cookies
Ingredients:
1/4 c. melted and cooled coconut oil
1/4 c. brown sugar
2 tbsp molasses
1 egg, room temp
1 tsp vanilla extract
1 c. almond flour
1/4 c. coconut flour
1/2 tsp baking soda
3/4 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp allspice
1/4 tsp sea salt
A few tbsp organic sugar for rolling cookie dough into
Preheat oven to 350 degrees.
In a large bowl mix the coconut oil, brown sugar, molasses, egg, and vanilla.
Then add in the almond flours, baking soda, spices and salt.Mix well to combine.
Let the dough sit for a few minutes.
I also added 1/2 c. dark chocolate chunks to 1/2 the cookie dough just to add a lil something different. 
use a small ice cream scoop to make balls. Roll each one into the sugar, put on sprayed cookie sheets, press with bottom of glass to gently flatten the cookie. 
Bake for 8-11 min. Let cookies cool for 10 min then transfer to cooling rack.
