Artichoke white bean hummus, yes please!

Who doesn't love their veggies? Well we seem to be a house that loves them, but that is just because since my son was just starting to eat, he tried every kind there is and I love them in any shape or form and well my hubby comes along for the most part. 
Of course the way we eat our veggies varies, from streamed, to roasted (a big fav in our house), raw and grilled. Raw or plain is easy for snack time - baby carrots, tomatoes, snap peas and cucumber - and what better way then to pair them with a lil dip. Our son loves a good veggie plate and dip, hummus that is at snack time.
I make my own hummus on a weekly basis. Here is the latest incarnation of it.
Ingredients:

1 can white beans
2 tbs tahini (I love the organic one from Trader Joes)
1/2 jar of grilled marinated artichoke hearts, chopped and use half of the liquid
Juice of 1 lemon
1 tbsp olive oil
1 tsp sea salt
1 tsp sweet paprika (this time I used a special one that my mil gave me from her last European cruise)
1 tsp cumin
1 tsp minced garlic
Put all ingredients into food processor, blend until smooth.

Yes, the Cowboys lost their last game of the season. And yes, it was a dark day in our house. My hubby is a big, lifetime Cowboys fan so by default so am I and our son.
We had hoped for big things, like maybe going to Houston to see our Cowboys get back to the big show, the Superbowl. Well, we dreamed but the Packers made sure that dream ended yesterday. There is always next year.....
