Happy New Year! Hope you all had a wonderful holiday, great time spent with family and friends.
We definitely did....taking a little vacation complete with indoor water park fun. Yes, we are still drying out. And what New Year's Eve is not complete without a countdown, ours was at our friend's b'day at 12 noon, let the balloons fall!
Here is a new recipe that we enjoyed with our Christmas dinner which is so simple to throw together, you must try it.
6oz Brussels sprouts
1 c. Pomegranate seeds
2 c. Spinach leaves, cut into thin strips
1 head endive, cut into thin strips
1/4 c. Lemon juice
1/2 tsp black pepper
1 tsp sea salt
1/2 c. Olive oil
1/2 c. Shaved Parmesan cheese
Mix all together and serve.
