Sweet hearts!

sweet waffle skewers
Yes, its definitely almost Valentine's Day around in our house.  There is so much LOVE being spread around, from the cute Valentine's Day cards being made (emoji ones this year) to homemade crafts, yogurt smoothie bottles become beautiful vases to of course any number of sweet treats in the shape of hearts.
Who can resist waffles? Especially heart shaped ones with fruit, kabob style. Well, not my son, he was full of love receiving and eating these!

Ingredients:
3/4 c. Gluten Free Pancake Mix (I love Trader Joes' Buttermilk pancake one)
1 egg
1/4 c. water + 2 tbsp
2 tbsp coconut oil, melted
1 tsp cinnamon (I always add a lil for that hint of warmth)
Mix all together. Cook on waffle griddle.
I used a little heart shape cookie cutter to get the perfect little waffle. I used a wooden skewer putting a few strawberries (cutting out the top to make it heart shape too) and few blueberries too.
Enjoy!

With the sun being in abundance today so was the bike riding. I only stopped for a few breaks and a Valentine's Day lunch out with Nonna. Love this boy's energy!
