Are you feeling a lil nutty? I do a bit since I've only slept 5 hours and Mondays are my long days in the office = a jam packed day at work. Well the nuts I am really talking about are those for a delicious nut butter. In our house we love sunflower seed and almond butter, but my son loves cashews so I thought lets make some cashew butter. One simple food staple that you can make from scratch in a few minutes.Ingredients:
1 lb raw cashews
1 tbsp coconut oil, softened but not melted
1/2 tsp cinnamon
1 tsp sea salt
Toast the cashews on a sheet pan for 10 min at 350 degrees.
Let them cool for a 10 min.
Put cooled nuts and remaining ingredients into food processor and grind until mostly smooth.
Put in an air tight container and refrigerator.
My taste tester gave me a big thumbs up.
