I am all about the healthy, but quick put-it-together dinners. And lately I have been in a cooking rut, making several recipes on repeat so it was time to change it up. I have been seeing lots of sheet pan dinners so I finally broke down and whipped one up. I've also wanted to add a little heat on this try so here it goes.
Ingredients:
1 1/2 lbs chicken tenders
3 sweet potatoes, peeled and sliced into chunks
3 yellow squash, cut length wise and into chunks
1 purple onion, thinly sliced
2 tsp sea salt
1/2 tsp black pepper
3 tbsp olive oil
1/4 c. cilantro, chopped
1 tbsp harissa
1/2 tsp cumin
Put all ingredients into a bowl and toss together until well mixed. Pour out onto a sheet pan. Bake at 425 degrees for 20 min. The onions came out sweet and caramelized and sweet potatoes were baked perfectly. The lil bit of heat from the harissa, coupled with the cilantro and cumin was just warm enough. Next time I will add some diced up avocado when served to add a little creamy coolness.
I will definitely be trying my hand again at other sheet pan combos - protein, veggies, a good root veggie, herbs, good fats......this may be the beginning of a beautiful set of combos.
