Nutty cocoa energy bites

I'm always looking to make a new treat for my son that is relatively healthy. I love making different versions of what amounts to an energy bar, ball or bite. Here is another one that has been a hit, meaning they only lasted a few days when a few friends tried them too.
Ingredients:
1 tbsp coconut oil, melted, and cooled
3 tbsp cacoa nibs
8 pitted Medjool dates
1/2 almond butter
3 tbsp chia seed (could use flaxseed too)
1 tsp sea salt
1/2 tsp cinnamon
3 tbsp almond flour
3 tbsp unsweetened coconut
Flake sea salt

Coat a loaf pan with oil then line with parchment paper with long side (for lifting out bites easily)
Pulse cacao nibs in food processor until a fine powder, put aside.
Put dates in a small heatproof bowl; pour boiling water over to completely submerge. Cover with plastic wrap for 8-10 min, until they are softened.
Drain dates, put into food processor. Add nut butter and remaining 1 tsp oil, pulse until all comes together, mixture should be crumbly. Add seeds, salt and cinnamon, pulse to blend together. Add flour, ground cacao nibs and shredded coconut and pulse to combine. Press into prepared pan in one layer. Cover and chill until firm, about 1 hr.
Uncover and use sides of parchment to lift out of pan. Cut into 6x3 grid and sprinkle with flake sea salt.
Keep in refrigerator for up to 2 weeks (I dare you).
Enjoy!
