Hope you all enjoyed a special Mother's Day however you celebrated. I was spoiled by my boys with a 8 mi beach bike ride, brunch and an afternoon at home with catered lunch, movies and rest. And to top it all off our son lost his first tooth. As I posted earlier my heart is full!!!
Stomachs are full too (good thing I am starting a cleanse tomorrow). I made these beautiful dipped strawberries for my Mom to enjoy after our lil lunch.
It's such an easy dessert to make.
Ingredients:
1 dozen strawberries
1 bag regular size semi sweet or dark chocolate chips
1/3 c mini dark chocolate chips (I used Enjoy Life vegan ones)
1/3 c. chopped almonds
1/3 c. chopped roasted coconut chips
You can use whatever toppings you like that are easy to chop up and will look pretty on the strawberry. Have fun with it.
Melt the regular size chocolate chips in the microwave in 30 second intervals or in a double boiler on the stove until melted smooth. Put the other toppings in separate bowl and have a few clan spoons ready.
Dip 1 strawberry into the melted chocolate then spoon one of the toppings all around the the strawberry until covered. Sit the strawberry on a platter to firm up. Repeat until all strawberries are dipped & decorated. Keep in the fridge until ready to serve.
