I love to discover new ways to eat your veggies. Yes, roasted, bbq'd, shredded, you name it I love it. And of course its great when your kids love their veggies right along with you. Of course try new and different ways to entice them to eat more veggies. Here is a way that is sure to be a hit - try something new with beets, make them into baked chips. And who doesn't love a good, crunchie chip?
Red Beet Chips

Ingredients:
4 red beets, peeled and sliced ~ 1/16 thick with a mandolin, with a knife is fine too
2 tbsp olive oil
1/2 tsp sea salt
Pre heat oven to 350 degrees
Spray two baking sheets
Toss cut beets with olive oil and salt in a bowl until completely coated
lay out beets on baking sheets, do not overlap but okay if touching
Bake for 30-40 min. Make sure to not over bake them but you do want them to lose most of their moisture. They crisp up while they cool off. Serve by themselves or with tahini or your favorite dip.
