Who doesn't love ice cream? Well if you have a favorite National Ice Cream day is definitely the day for you to enjoy it. Of course there is nothing like a cold and creamy scoop. I am lactose intolerant so I like to find alternatives to the conventional dairy based treat. Here is one that I like to make as a treat and my son loves this version too.
Banana almond butter ice cream
Ingredients:
2 bananas - sliced and frozen already (a few hours or over night)
2 tbsp almond butter
2 tsp cacao nibs

2 tbsp almond butter
2 tsp cacao nibs
Put bananas into food processor and blend until creamy consistency. Add in remaining ingredients blend again until creamy. Put into freezer container to firm up (a few hours). Serve when you have the craving. Double or triple the ingredients to make bigger batch.
