Summer favorite- steamed artichoke

Who doesn't love an artichoke? Yes, there is a little work involved but I'll give you some shortcuts and oh it will be so worth it. 
How to - Take an artichoke, cut the point off each leaf, cut stem off to create straight stump, and rinse completely. Place in low microwaveable Pyrex dish allowing artichoke to sit up straight (remember flat stump of a stem), fill dish half way up with water, cover with plastic wrap. Cook in microwave 7 min (depending on size if very big add 2-3 min or if your like me cook 2 at a time add a few min).
Make a dipping sauce- I like ghee with an aioli mustard combo. Just take a few tbsp ghee and mix equal parts mustard, microwave (to bring together) 15 sec. Serve together and see who fight for the best part, the heart.
