Since I've been enjoying beet greens (the stems and leaves attached to the beet root veggie) a lot lately I've had some extra beets that I needed to give a little spotlight to as well. I love getting the gold ones when they are available in addition to the the red ones and make a shredded salad. Beets are a great veggie, a little earthy and sweet in flavor. Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas)
Salad - 6 beets, peeled and shredded. I used my food processor to do it quick
toss the shredded beets together with a simple dressing -
- 2 teaspoons Dijon mustard
- 3 tbsp apple cider vinegar, preferably raw
- ½ teaspoon sea salt
- ground black pepper to taste
- 7 tbsp extra-virgin olive oil
- 1 teaspoon honey/agave
- Hazelnuts, shaved, used a micro-plane to get this and sprinkle on top of dressed salad
