After a fun filled weekend taking it slow this holiday morning seemed perfect. My son asked for a surprise brunch so this is what he got a delicious, gluten free Dutch baby add some berries. Someone was excited about his giant pancake, yes, so much so he couldn't wait for a bite.
Preheat oven to 375 degrees

Ingredients:
3/4 c. gluten free flour
1 tbsp unsalted butter
3 eggs
1 tsp cinnamon (always better with a lil hit of warmth)
3/4 c. milk
Mix all ingredients together, until well blended. Use cast iron skillet or oven proof skillet with 1 tbsp butter. Put skillet in oven as it preheat.
When oven hits temp take pan out and pour in Dutch baby batter and place back into oven. Bake for 12 min turning skillet once to ensure unevenly cooked. Remove from oven. Dutch baby should slide out of pan easily.
Serve with berries on top. Smiles will be endless! Now off to a beach bike ride & bbq.
