Cool meal

With summer upon us and some serious heat this last week I have been trying to minimize cooking/turning on the oven and planning cool foods that are interesting but simple too. And eating cool foods in summer helps to keep body temp down. 
Here is a meat, cheese and veggie platter that the family loves.
Ingredients:

Start with veggies - I steamed a few artichokes the day before and keep the fridge to serve up as another dinner veggie option, butter lettuce (to use as a cup/wrap device), beautiful bell pepper strips, add cool and crunchy cucumbers.
Proteins - chilled salmon (i added the honey smoked salmon from Costco, yup pretty good in a pinch), grilled chicken (good use of last nights bbq work), hard boiled eggs with a lil lemon pepper, salami sticks, cheese(s) too. 
Add don't forget some healthy fats - slice up an avocado, put out some tahini/hummus or homemade dressing. Toss in some favorite crackers or bread too. The 3 seed beet crackers from Trader Joes are so good.  
My fav combo - lettuce, salmon, avocado and cucumber with a drizzle of tahini. 
My son loves to call this dinner the Cool Dinner Platter, I call it good stuff.
