Prepping time

I love to get food prepped for the week when I have a little downtime the weekend before. In the end it saves me time and allows me to grab healthy options quickly for snacking, prepping for lunches and dinners too. Here I have prepped some of our favorite veggies - beautiful red and yellow striped all over peppers. Slice them up and get ready to grab them with all that crunch and just bursting with vitamin C and sweetness. We also eat a lot of the Persian cucumbers. Here I slice them into longer wedges, store them in a container with the zest of 1 lime and juice of 2 limes and sprinkle a lil sea salt right on top. Yummy treat any day. 
And of course during these summer months you can never have enough fresh melon ready to be consumed. I cut up watermelon and cantaloupe or galia (which tastes like a combo of honeydew and cantaloupe). Place them in a big storage container, will last up to one week in the fridge.
