Summer rolls

Another non cooked meal idea - summer rolls.
Yes, a spring roll but we're in summer so renamed.
You can keep it meat free just by selecting your fav veggies or add in some cooked shrimp, chicken, salmon or steak. Lately when I BBQ I double up on meats so there are extra leftovers for salads, bowls and wraps, easy, cool meal adds like this.
Ingredients:
Butter lettuce
Cabbage, purple or regular cut thinly- I picked up a mix from Whole Foods to save time and bonus I got carrots in the mix too

Persian cucumbers, julienne
Micro greens
Mango, julienne
Thinly sliced chicken 
Spring roll rice wrapper - I picked this one up at Whole Foods but available here too.
Following directions on spring roll wrapper to soften it. I start with a lettuce leaf then layer in your veggies and meats. Try not to over stuff then wrap like a mini burrito and cut in half.
Try having a tray set up like mine and have the kids try their hand at it. We make homemade sushi a lot which based on same idea and is so fun to make and eat. 
And the best part - sesame dipping sauce:
2 tbsp tahini
1 tbsp coconut aminos
2 tbsp honey
1 tbsp apple cider vinegar
1 tsp chili pepper flake








My summer rolls may not win any perfection awards but the family liked then and will be part of our cycle of meals- so time for me to improve!
