Still savoring the last bits of summer, yes pls! What better way then to bring it out with summer fruit in your cooking. I love making chia seed pudding for a sweet snack or serve for breakfast. Chia seeds are rich in soluble fibre which benefits blood sugar control, cholesterol levels and gut health. Their omega 3 fatty acids help to fight inflammation, as part of a healthy diet. In this recipe I like to add a little flavor to the base with some pureed mango which always make me think of summer.
Ingredients:
1/2 c. chia seeds
2 c. coconut milk
1/2 c. agave/honey
1/2 tsp cinnamon
1/2 c. pureed fruit (berries work well too)
Mix all ingredients together until well blended in a glass air tight container so you can easily move into fridge for at least 2-3 hrs to set up then you can serve.
Mangoes contain high level of vitamin C, fiber and pectin making it a perfect fruit that helps in controlling high cholesterol level. Another benefit of eating mangoes is that it cleanses your skin from deep inside your body. It treats pores and gives a glow to your skin and who doesn't need that.
