Mediterrean style chicken

Although its been so hot lately I decided to change it up and actually turn on the oven to make one of my son's favorite meals and hope that it brings on cooler weather.
Best to prep it overnight so the flavors have time to marry up well. Its great for entertaining because of the do ahead prep and combo of sweet, salt and tart flavors.
Ingredients:
4 lg chicken breast halves each cut into 2 pieces or 8 chicken breast tenders
1/3 c. dried prunes, halved
1/3 c. dried apricots, halved
1/2 c. pitted green olives, coarsely chopped
2/3 c. dry white wine (can omit)
1/4 c. red wine vinegar
1/8 c. balsamic vinegar
1/3 c. olive oil
1 tbsp dried oregano
2 heaping tbsp capers with juice
1 tbsp chopped garlic
1/4 tsp red chili pepper flakes
3 bay leaves
Marinate chicken with prunes, apricots,  olives, white wine, vinegar , olive oil, oregano, capers, garlic, red pepper flakes and bay leaves in ovenproof shallow pan (10×13 Pyrex works) overnight or at least 6 hrs. Preheat oven 350 degrees. Sprinkle a little sea salt and black pepper on top. Bake chicken for 40-45 min. Serve with brown rice and simple salad.
