Fennel, apple and sweet potato chicken

First days of fall and so I tried a new combo of my favorite savory fall flavors to make chicken new again. I wish I could share that great herb roasted chicken and veggie smell that filled up the house. Needless to say it was divine!
Ingredients:
1 fennel bulb, top cut off, cored and  thinly sliced
1 small apple, cored and thinly sliced
1 sweet potato, peeled and cut in 1/4 in rounds
2 tbsp olive oil
2 tbsp ghee, melted 
2 tbsp Williams Sonoma Turkey herbs or make your own mix of dried sage, thyme and marjoram 
1/2 tsp sea salt
1/2 tsp black pepper
Mix all ingredients in a bowl until all well coated. Pour out into a sheet pan.
Bake 350 degrees for 25 min. Serve with a green salad. If you are a fan of sheet pan dinners this is a great add to your fall line up.
