Can you think of anything better than a little pumpkin pie at breakfast or snack time? This pumpkin pie butter can be added to cooked oats, toast, dip fruit into it or just dig in for a spoonful or few.
Ingredients:
2 1/2 c. fresh roasted pumpkin
1 1/2 c. walnuts, toasted
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
sprinkle of sea salt
2 tsp maple syrup

Preheat oven to 375 degrees. Cut and deseed a mall fresh pumpkin into large pieces. You can leave the skin on. Rub with melted coconut oil and place on a parchment lined baking sheet. Roast for 45 minutes to 1 hour until soft. Peel away from the skin.
Place nuts on a parchment lined baking sheet and roast at 375 degrees for 7-10 minutes until golden brown but make sure not to burn. Place all ingredients in food processor or high powered blender. Blend until smooth and well combined about 2-3 min.
