Chili time

Whenever I think of Superbowl Sunday I think of hearty foods but they can be healthy too. I think back to when we used to host our Superbowl parties with themed based on local of gameday with chili always being a popular hit. Oh and always secretly wishing our Cowboys were in the big game.
Here is a spin on chili for game day or these colder than usual nights for dinner which comes together very quickly. 
This has been modified from a Tyler Florence recipe.
Ingredients:
2 tbsp olive oil
1 lb ground chicken
1 purple onion, chopped
5 garlic cloves minced - I used 2 1/2 tsp crushed garlic
2 tbsp ground cumin
1 tbsp ground coriander
1 c. tomatillo salsa - I used Trader Joes version
4 c. chicken broth
2 cans cannellini beans/white kidney beans, drained
2 c. fresh spinach, julienned
Handful fresh cilantro, chopped
Juice of 1 lime

Heat oil in heavy bottom soup pot over medium, high heat
Add ground chicken, cook 3 min stirring often.
Add onion, garlic, cumin and coriander. Cook 4 min, continue to stir.
Add salsa and broth. Bring to a simmer. Add 1 can of beans and mash up 2nd can then stir into chili. Add spinach. Simmer for 10 min. Remove from heat. Add cilantro and lime juice.
I like to serve it with a big salad, gluten-free cornbread with some honey, cilantro butter.
